Warm spiced pear and almond tart
Warm spiced pear and almond tart with a flaked chocolate and lime marmalade ice cream

Ingredients
Sweet pastry
1lb plain flour
5oz icing sugar
8oz butter
1 egg
1 tablespoon milk

Almond Mix
4oz butter
4oz caster sugar
1 oz plain flour
3oz ground almonds
2 eggs
~
2 pears
2 pinches mixed spice
~
Ice cream Mixture
½ pint double cream
½ pint milk
6 egg yolks
6oz caster sugar
½ jar lime marmalade
1 Cadburys flake
Method
1) To make the pastry, place the sugar, butter and flour into a food processor until it reaches the breadcrumb stage, then add the egg and milk to form a dough. Rest for 30 minutes.
2) Roll out the pastry and line 4 tartlet moulds, then place into a warm oven for 5 minutes to set.
3) Peel and dice the pear and gently sauté. Add the mixed spice and place into the tartlet moulds.
4) To make the almond mix, place the sugar and butter into the food processor and beat until fluffy. Add the flour and almonds, then place on top of the tartlets and bake for about 15 minutes until set.
5) To make the ice cream, place the milk and cream into a pan and bring to the boil, then, add the marmalade. Beat the eggs and sugar together, pour the milk/cream mix over and whisk. Place into an ice cream machine, flake the chocolate into the mix and then churn until the mix is of a frozen consistency.
Serving
Place the tartlet on the plate, then a ball of ice cream. Serve with semi whipped cream.
