Roast Welsh Lamb with Figs and Shallots
SEASONED IN THE TRADITIONAL WAY, THIS DISH CONJURES UP THE ESSENCE OF SPRING.

Preparation Time: 15 minutes
Cooking Time: 2 hours
Serves 4 – 6

IngredientsRoast Welsh Lamb with Figs and Shallots
1.8kg (4lb) leg of Welsh Lamb
2 garlic cloves, cut into thin slivers
1 tbsp olive oil
Salt & freshly ground black pepper
6 fresh figs, halved
2 tbsp fresh rosemary leaves
2 tbsp raspberry vinegar
1 tsp white sugar
Method
1. Preheat the oven to 190C , 375F, gas mark 5.Using a sharp knife, make small slashes in the leg of the lamb and push a sliver of garlic into each one. Rub the surface of the meat with the oil and season with salt and pepper. Transfer the leg to a roasting tin and cook for between 1hr 40 minutes and 2 hrs.
2. 30 mins before the end of the cooking time, add the halved shallots and figs to the roasting tin & sprinkle with the rosemary leaves. Return to the oven until the end of the cooking time.
3. Remove the Welsh lamb from the roasting tin and transfer to a board. Cover with foil and leave to rest for 5 mins.
4. Transfer the figs and shallots to an ovenproof dish and keep warm. To make the dressing, sit the roasting tin over a medium heat on the hob and add the vinegar and sugar. sTir ubtil simmering, then allow to bubble for 2-3 mins.
Serving
Arrange the Welsh lamb on a large plate with the figs and shallots. Drizzle the dressing over the meat and serve immediately.
